This rub is for the hunters out there who want a good flavor to season their elk, rabbit, deer, moose, etc. It can also be used on domestic meats as well.
Recipe: Wild Game Rub Roasted Turkey Legs
Serves 4 | Prep: 15 minutes | Cook: approximately 1 1/2–2 hours | Rest: 10 minutes
Ingredients
- 4 domestic turkey drumsticks, approximately 12–16 ounces each, thawed if frozen
- 1 tablespoon Betcha Got Seasonings Wild Game Rub, or to taste
- 2 tablespoons olive oil
- 1 onion, thickly sliced
- 1 cup unsalted chicken broth
Directions
- Heat the oven to 350°F. Arrange the onion slices in a roasting pan and add the broth.
- Pat the turkey legs dry. Coat with olive oil and Wild Game Rub, then place on top of the onions.
- Cover the pan tightly with foil and roast for 1 hour. Carefully remove the foil, keeping clear of the steam.
- Roast uncovered for another 30–60 minutes until the skin is browned and the meat is tender. Check the thickest part of each leg without touching bone: turkey must reach at least 165°F, and drumsticks are often more tender around 175–180°F. Larger legs may need more time. If the pan dries out, add a little water.
- Rest for 10 minutes, then serve with the onions and pan juices. Pair with roasted potatoes or vegetables.
Tip: This recipe uses domestic turkey drumsticks. Use a food thermometer rather than cooking time alone to check doneness.
