Recipe: Blacken Rub Skillet Steak with Garlic Butter

Serves 2 | Prep: 10 minutes | Cook: approximately 10–16 minutes | Rest: 5 minutes

Ingredients

  • 2 boneless ribeye or strip steaks, 10–12 ounces each and approximately 1 inch thick
  • 2 teaspoons Betcha Got Seasonings Blacken Rub, or to taste
  • 1 tablespoon neutral cooking oil
  • 2 tablespoons unsalted butter
  • 2 garlic cloves, lightly crushed
  • 2 sprigs fresh thyme, optional

Directions

  1. Turn on your kitchen exhaust fan. Pat the steaks dry and coat both sides evenly with Blacken Rub.
  2. Heat the oil in a heavy skillet over medium-high heat. Add the steaks without crowding and sear for approximately 3–4 minutes per side to form a dark spice crust.
  3. Reduce the heat to medium-low. Add the butter, garlic and thyme, if using. Continue cooking, turning occasionally and spooning the garlic butter over the steaks. Lower the heat if the seasoning begins to burn.
  4. Check each steak with a food thermometer inserted into the center from the side. Cook to at least 145°F before removing from the skillet; cooking time varies with thickness and stove heat.
  5. Rest for 5 minutes, then slice across the grain and spoon the garlic butter over the top. Serve with mashed potatoes and a green vegetable.

Tip: Blackened means a deeply browned spice crust, not burned seasoning. Adjust the heat as needed and use temperature rather than cooking time alone to check doneness.
